Journal FortKnox's Journal: Forgotten Chicken Recipe 8

Shadow Wrought requested it, and while I was typing it into the reply, I figured more people may want to try it, so here it is:
1 can of cream of celery
1 can of cream of mushroom
1 soup can full of milk (not evaporated or anything, just drinking milk out of the gallon)
1 packet of dry onion soup mix
Fav cuts of chicken (we use about 3 boneless-skinless breasts, but we've done cutlets with success)
1 cup of minute rice
9 X 13 pyrex glass dish (any old serving dish will work, I assume, but this is what we use)

Spray dish with non-cooking spray. Cover the bottom of the dish with the minute rice. Go for an even spread. Place chicken on top. Mix the soups + milk in a seperate container. Will be like a gravy consistency. Pour over chicken and rice. Sprinkle onion soup mix on top of it all. Cover will foil and bake for 2.5-3 hours on 325.

It can be baked for longer (hence the 'forgotten' part). We usually put it in the oven Sunday morning, go to church and return and its done. The rice should be mostly or all cooked. If its dry, you may have overcooked it. The chicken should fall apart practically with a fork.
To serve, get a piece of chicken, then scrape up the rice (it should almost stick, with brown cooked-in goodness as a crust on the bottom).
I'm sure you could fancy is up with broccoli and such, but its my wife's recipe and I don't make it.

Also makes FANTASTIC leftovers. Best part of having forgotten chicken is having leftover forgotten chicken in my lunch the next day.

It is probably bad for you, but like I said... its comfort food. Its meant not to be good for you ;)

    • Sorry I have yet to come up with a recipe that is the mighty glutent free and vegetarian duo. I'll have to dig something up (though most of my recipes include some type of meat)...

      I betcha I can come up with a good tomato sauce (though I usually flavor mine with meat, I'll try to make an exception). Hrm... or I've been mulling over making a gorganzola fettuccini alfredo.... Cheese is alright, right? Hrm... dunno about the cream, though...
      • cream is all right. I'm allergic to tomatoes now. I'll use lactaid pellets.

        We substitute other things for chicken; we'll probably try that with homemade milk sauce and some mushrooms instead of chicken. We like casseroles a lot. Hm. Good idea for dinner, actually. Thanks!

  • Thanks for the recipe. Sicne my wife is working tomorrow until six, I think I will make a run at cooking this tomorrow for dinner. I will certainly let you know how it turns out.
    • Something my grandma makes. Only changes are:

      1. no cream of celery (use 2 cans of cream of mushroom)
      2. instead of onion soup mix, sprinkle with uncooked stove top stuffing.

      Around the hollidays, she'll also put in 1 can of french cut green beans mixed together with the rice.

  • So, uhhh... thanks for your risotto recipe. Or am I missing something? Sounds pretty similar to the chicken risotto my mum used to make. Either way, sounds tasty. I might have to make some...

    If you were my mom and didn't live in PA, you would probably throw in some Cream of Onion soup (which cannot be purchased near her, probably due to laws limiting the fat/nutrients ratio allowed in soups).
